Homemade Pancakes are pretty much the perfect weekend food.

Simple and quick… and perfectly fluffy.  Stacked tall with cold butter and real maple syrup (and crispy bacon). It’s almost the only reason to get out of bed on a Saturday!

How to Make Pancake Mix for Homemade Pancakes

Homemade Pancakes don’t take many ingredients.  You’ll simply take some dry ingredients and combine them with butter, eggs and milk… voila, pancakes.

Making a homemade pancake mix just means keeping the right ratios of dry ingredients ready to go. You’ll simply scoop some mix, add some wet ingredients and you’re on your way to fluffy pancake perfection in minutes.

Buying and preparing all of your own foods is the single easiest way to ensure that you know exactly what your family is eating.  It is also a great way to save money on groceries!  Most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.  You can make your own cake, bread and other mixes and get delicious and cheap baked goods but, today, let’s discuss pancake mixes. This homemade pancake mix is easy to whip up and is a great way to save on the budget.

What Makes Pancakes Fluffy?

To make sure your homemade pancakes are perfectly fluffy here are a few of my fave tips:

  • Use fresh ingredients – Believe it or not, old ingredients can make your pancakes fall flat (especially baking powder).
  • Do not overmix – A few lumps are not only ok, they’re required!
  • Grease your pan with oil – You’ll want a well-greased pan and butter can burn.
  • Flip when bubbles pop – as soon as the bubbles pop, you ‘ll want to flip your pancakes.

Homemade Pancake Mix!

Delicious fluffy pancakes from a homemade mix.
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 20 pancakes

Ingredients  

Dry Pancake Mix

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar

To Make Pancakes

  • 1 cup pancake mix above
  • 1 egg
  • 1 cup milk or as needed
  • 1 tablespoon melted unsalted butter or oil

Instructions 

Dry Pancake Mix

  • Combine all ingredients. (You can easily double or triple this part)
  • Store tightly sealed in a cool dry place.

To Make Pancakes

  • Preheat & lightly grease a griddle or pan over medium to high heat.
  • Combine 1 cup of pancake mix with egg, ½ cup milk & butter or oil. Add additional milk as needed, you may need up to 1 cup.
  • Pour ⅓ cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

Notes

Each 1 cup of dry pancake mix will make approximately 5 pancakes.
Store dry pancake mix in an airtight container in a cool dry place for up to 3 months.

    I LOVE THIS RECIPE. It is so easy to make it, or even make a double batch of it, and put it in a container in my pantry. I only started using this about a month ago and it has provided us with breakfast and dinner last minute at least five times already haha. The pancakes are very tasty and it is easy to make a bigger batch if you need to feed a lot of people or a smaller one if you just want pancakes for yourself!

    I was wondering if anyone has tried using this mix to make banana pancakes. If I put bananas in, is there anything I need to change about the pancake recipe? Thanks in advance!5 stars

      We have this delicious banana pancake recipe that sounds perfect for you. If you want to add bananas to this recipe I would mash them and add them with the milk. You may need to reduce the liquid in this recipe to accommodate for the addition of the mashed bananas.

    I’ve found the using a cup of self rising flour works really well as an alternate for the baking soda mix as it is already in the self rising flour. I sometimes like to add fruits or vanilla. Rises nicely and really good.

    1 cup self rising
    1 cup milk
    Tablespoon of oil
    1 egg
    3 tsp sugar
    Dash salt
    No need for storage

    This was a good basic recipe. They didn’t fluff up much for me and my ingredients are fresh, but that’s ok. I didn’t get any “mmm good” comments from my family, so I think next time I’ll add vanilla extract to the wet ingredients to boost the flavor and maybe more sugar.4 stars

      We just did this the other night! The buttermilk made them taste sooooooooo delicious! I would just be ready to add much more buttermilk than you need regular milk, because it is a bit thicker in consistency. We ended up probably having to stir our pancakes just a tad too much because we had to keep adding buttermilk to keep it from being too thick hahaha. So maybe just start with a cup of buttermilk instead of half a cup. But you should definitely do it! So tasty!!!!!5 stars

      I wouldn’t skip it, it helps to make the pancakes nice and fluffy when mixed with milk (which is slightly acidic).

    There is an inconsistency in your recipe. It says to make pancakes have 1 cup milk, but in the instructions below it says to add 1/2 cup milk (and you may need to add more).

    We used 1 cup mix, 1 cup milk, 1 egg, and 1T oil. We ended up having to add another 1/2 cup of mix because it was so thin.

    For protein pancakes, should I add 1 scoop of whey protein powder to your 1 cup pancake mix or add the 1 scoop protein powder to the 1cup measure and fill the rest with your pancake mix?

    Love this idea!! Just made the mix and promptly made pancakes. I found the batter to be too runny so when I looked closer it said to use 1/2 cup of milk. I put the whole cup in- totally my fault for not reading the whole thing through. I wondered if you might consider adding a 1/2-1 cup on the initial ingredients. Might clear up some confusion.
    Also- I am so excited to make more of your recipes! First time using one of your recipes but it will not be the last!

    These are seriously the best pancakes I’ve ever had. Eating them as I type! I used vanilla sugar in place of regular sugar, but otherwise followed the recipe. They are perfect. So much better than any store bought mix I’ve had, and much better than any homemade pancake I’ve ever had, too. This is a new pantry staple for me.

    I’ve been wanting to make my own pancake mix for a long time, esp. when I’m out of the store bought Buttermilk mix. I like it. It’s easy, like yours sounds.
    Can I add dry Buttermilk Powder to the milk in your recipe ?
    I also like to use Pancake Batter to batter Onion Rings that have soaked in ice water for an hour or so. Batter and fry in hot grease. Place on paper towels. Enjoy !
