Ingredients For Cherry Tomato Pasta

Tomatoes: This is the perfect way to use up that bounty of garden cherry or grape tomatoes. You can use any variety of small tomatoes.

Oil and Vinegar: These ingredients add flavor and help the tomatoes to caramelize in the oven. Use extra virgin olive oil if possible.

Herbs: I use dried herbs, including basil and oregano, as they pair perfectly with roasted tomatoes. If using fresh herbs, add them to the pasta instead of roasting with the tomatoes.

Garlic: I love lots of fresh garlic in this recipe. You can use garlic powder in a pinch, but fresh is best if possible.

Pasta: Any kind of long pasta will work well in this recipe. Try linguine, fettuccine, or even spaghetti noodles.

Variations

  • Add protein: Make it a main dish and top this cherry tomato pasta with oven-roasted chicken, salmon, Italian sausage, or garlic butter shrimp.
  • Add more veggies: Add zucchini, asparagus, or bell peppers to the mix.
  • Add a flavor boost: Add a swirl of basil pesto or a sprinkle of red pepper flakes.

How to Make Cherry Tomato Pasta

Pasta with cherry tomato sauce is fast, fresh, and flavorful.

  1. Toss cherry tomatoes with the other ingredients (except pasta and garnishes) and roast (recipe below).
  2. Boil the pasta while the tomatoes are roasting.
  3. Add tomatoes to pasta and toss to combine. Garnish and serve.

Quick Tip

Cherry Tomatoes can be left whole and ‘roasted’ in the air fryer. Keep the tomatoes whole and toss them with the seasonings, as mentioned. Line the air fryer basket with foil to catch all of the juices and roast the tomatoes at 400°F for 9-12 minutes, gently shaking after 5 minutes.

Single servings can also be made in the toaster oven on a rimmed baking pan.

Storing Leftovers

Store leftover cherry tomato pasta in an airtight container in the refrigerator for up to 4 days.

Cherry Tomato Pasta

Roasted tomato pasta is a flavorful dish with sweet, caramelized tomatoes and fresh herbs.

Ingredients  

  • 6 cups cherry tomatoes halved, or grape tomatoes
  • 4 cloves garlic minced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste, freshly ground
  • 16 oz spaghetti or long pasta of your choice

Garnish

  • ¼ cup thinly sliced fresh basil leaves
  • cup shredded Parmesan cheese

Instructions 

  • Preheat the oven to 425°F.
  • To a large rimmed baking sheet, add the tomatoes, garlic, oil, balsamic vinegar, oregano, basil, salt, and black pepper. Toss well to combine.
  • Roast the tomatoes for 15 minutes. Turn the broiler on to high and broil the tomatoes for 1-2 minutes or until they begin to brown a little bit on the edges.
  • Meanwhile, in a large pot of boiling salted water, cook pasta until tender but firm (al dente). Reserve 1/4 cup of pasta water. Drain the pasta, do not rinse.
  • Transfer the pasta to a large bowl. Add the tomatoes with all the pan juices and toss well to combine, adding pasta water if needed.
  • Garnish with fresh herbs and Parmesan and serve.

    I have made this a couple times and it’s great. I do fry up some pancetta and add it at the end. It adds a protein and a somewhat bacon flavor. I made it at least 2x month. Today I will sprinkle some rosemary infused olive oil, just a little and see how it tastes.

    This is my favorite pasta dish. I go very heavy on toppings of basil and mozzarella but the fresh tomatoes and balsamic make it amazing. I’ve made it many times :) It’s so easy too!5 stars

    I’ve made this twice now and it is SO good and ridiculously easy to make. It’s my boyfriend’s favorite pasta dish. The first time I made it with chicken romano as a protein and it went beautifully together. The second time around I needed a quick dinner and ate it on its own and it’s still just as filling and tasty. I would def recommend if you’re looking for a quick dinner go-to.5 stars

    I roasted my tomatoes the day before. How do you recommend I reheat them before adding to the pasta? Any ideas?

      I would heat them in the oven until heated through and then add to the pasta. If you didn’t, you could also broil 1-2 minutes to add a little bit of char/color once softened.
